Swiss Roll Cups With Berries

4 rolls (48 g each) of Raspberry jelly swiss rolls
4 containers (99 g each) of Vanilla pudding
250 ml (1 cup) of Blueberries
250 ml (1 cup) of Raspberries
125 ml (1/2 cup) Raspberry coulis
- Cut each of the rolls into 4 slices.
- Place about 30 ml (2 tbsp) of vanilla pudding in the bottom of each cup. Add 4 roll slices to each cup and press them against the sides. In the centre of the roll slices, add a little pudding and distribute about a third of the fruit into the cups.
- Pour the rest of the pudding into the cups and then add the rest of the fruit. Refrigerate.
- Drizzle the coulis into the cups before serving.
Side dish idea:
Heat 60 ml (1/4 cup) of water with 125 ml (1/2 cup) of sugar in a pot over medium heat, until the caramel becomes amber in color. Remove from heat. Line a baking sheet with parchment paper. Dip a fork into the caramel and shake it over the dish to form decorative lines with the caramel. Let cool.
