Italian Sausage and Feta Stuffed Zucchini

Italian Sausage and Feta Stuffed Zucchini

Ingredients

  • Courgette
  • Saucisse italienne
  • Oignon
  • Tomate italienne
  • Feta

Also needed

  • 15 ml (1 tbsp) olive oil

Optional

  • 10 ml (2 tsp) chopped oregano

Preparation

  1. Preheat the oven to 180°C (350°F).
  2. Scoop out the middle of the zucchinis with a spoon and coarsely chop the flesh.
  3. Heat the olive oil in a frying pan over medium heat. Cook the sausages, zucchini flesh and onion for 4 to 5 minutes, until the meat is well done. Drain.
  4. Remove the pan from the heat and add the diced tomatoes, feta, and oregano, if desired.
  5. Stuff the zucchinis with the sausage mix.
  6. Place the stuffed zucchinis in a baking dish, and pour the roasted red pepper coulis (see recipe below) into the bottom of the dish, if desired. Bake for 8 to 10 minutes.
  7. Bake under the broiler for another 2 to 3 minutes.

Roasted Red Pepper Coulis

Heat 30 ml (2 tbsp) olive oil in a pot over medium heat. Cook 1 chopped onion for 4 to 5 minutes. Add 15 ml (1 tbsp) minced garlic, 250 ml (1 cup) roasted red peppers, drained and minced, and 2.5 ml (½ tsp) chopped thyme. Cook for another 2 to 3 minutes. Use a blender to mix until smooth.
