Pork Fajitas with Pico de Gallo

Ingredients

  • Filet de porc
    605 g (1⅓ lb) pork tenderloin, chipotle-marinated
  • Tomate
    2 tomatoes, diced
  • Coriandre fraîche
    30 ml (2 tbsp) cilantro, chopped
  • Jus de lime
    15 ml (1 tbsp) lime juice
  • Tortillas
    4 tortillas

Also needed

  • ½ red onion, diced
  • 5 ml (1 tsp) garlic, minced

Optional

  • ½ jalapeno pepper, minced
  • 1 avocado, sliced
  • 60 ml (¼ cup) sour cream

Preparation

  1. Preheat the grill to medium-high heat.
  2. Place the pork tenderloins on a hot, well-oiled rack and close the lid. Cook for 18 to 20 minutes, turning the tenderloins from time to time.
  3. In a bowl, mix the diced tomatoes with the cilantro, lime juice, red onion, garlic, and jalapeno pepper, if desired.
  4. Heat the tortillas in the microwave for 30 seconds.
  5. Cut the pork tenderloin into strips.
  6. Top the tortillas with pork, salsa, and avocado and sour cream, if desired.
