Cheesy Broccoli and Quinoa Cakes

375 ml (1 1/2 cups) of brocoli, coarsely chopped
560 ml (2 1/4 cups) of quinoa, cooked and chilled
90 ml (6 tbsp) of plain breadcrumbs
125 ml (1/2 cup) of shredded sharp cheddar
15 ml (1 tbsp) of italian seasoning
- 1 small onion, chopped
- 3 eggs
- Heat a little olive oil in a frying pan over medium heat. Cook the onion and broccoli for 2 to 3 minutes, stirring from time to time. Remove from heat and let cool.
- Mix the quinoa, prepared broccoli, breadcrumbs, cheddar, Italian seasoning and eggs in a bowl. Season with salt and pepper.
- Form 12 cakes, using about 60 ml (¼ cup) of the mixture for each.
- Heat a little olive oil in the same frying pan over medium heat. Cook the cakes for 5 to 7 minutes on each side.
Side dish idea
Spicy Harissa Mayo
Mix 125 ml (1/2 cup) of mayonnaise with 15 ml (1 tbsp) of harissa, 15 ml (1 tbsp) of lemon juice and 15 ml (1 tbsp) of chopped parsley. Season with salt and pepper.
