Pizza-stuffed Chicken Breasts

4 skinless chicken breasts
125 ml (1/2 cup) pizza sauce
12 pepperoni slices
1 green pepper, chopped
160 ml (2/3 cup) mozzarella, shredded
- Preheat the oven to 205°C (400°F).
- Cut the chicken breasts in half widthwise, without slicing all the way through. Stuff the breasts with the pizza sauce, pepperoni, pepper and mozzarella. Use toothpicks to keep the breasts closed.
- Place the stuffed breasts on a baking sheet lined with parchment paper. Season with pepper. Bake for 18 to 20 minutes, until the chicken is cooked through.
Zucchini and Pine Nuts Bulgur
Bring 375 ml (1 1/2 cups) chicken stock to a boil in a pot. Add 180 ml (3/4 cup) bulgur and 1 diced zucchini. Cover and let simmer over low heat for 5 minutes. Remove from the heat and let rest for 5 minutes without removing the lid. Fluff the bulgur with a fork. Add 60 ml (1/4 cup) roasted pine nuts, 15 ml (1 tbsp) chopped parsley and 15 ml (1 tbsp) olive oil. Season with salt and pepper.
