Italian Sausage and Rice

450 g (1 lb) Italian sausages, sliced
250 ml (1 cup) Parboiled long grain white rice
Chicken stock 625 ml (2½ cups)
3 bell pepper halves, various colours, diced
125 ml (½ cup) Tomato sauce
- ½ red onion, chopped
- 15 ml (1 tbsp) parsley, chopped
- Heat a little olive oil in a large frying pan over medium heat. Sear the sausage rounds for 1 to 2 minutes.
- Add the rice, chicken stock, peppers, tomato sauce, red onion, and parsley, if desired. Season with pepper. Bring to a boil over medium heat.
- Cover and cook for 15 to 18 minutes over low heat, until the rice is cooked.
